ABSTRACT Destructurized starch and method of making same A thermoplastic melt made from starch containing bound phosphate groups and having a water content of 5 to 30% by weight calculated to the starch/water composition characterized in that within said melt the relative concentrations of the cations and the protons bound to said phosphate groups are within the limits eq.M2+ : M+ : H+ = (0.0-1.9) (0.0:0.9) : 0.0-1.4) wherein M2+ is a divalent cation, preferably Ca2+ or Mg2+ or a mixture of these cations; M+ is a monovalent cation, preferably Na+ or K+ or a mixture of these cations; H+ is the proton and the sum of the numbers of said equivalents eq.M2+ M+ and H+ per mole of phosphate groups equals 2.
