This invention provides novel methods for the detection of chitinous contaminants of non-chitinous biological materials. The methods are accurate, highly reproducible, rapid and relatively inexpensive. The methods are well suited to commercial applications, particularly in the food and agriculture industry where biological materials (e.g. food products) are regularly screened for contaminants (e.g. insect, mold, fungus, etc.). In one embodiment, the methods involve contacting a biological sample with a probe that is a lecting that binds chitin, contacting the sample with a pectinase; and detecting binding of said lectin to chitin where the binding indicates the presence of chitin in the biological sample.
L'invention concerne des procédés de détection de contaminants chitineux sur des matériaux biologiques non chitineux. Ces procédés sont précis, très reproductibles, rapides et relativement économiques. Ils sont bien adaptés à des applications commerciales, en particulier dans les industries agricole et alimentaire où les matériaux biologiques (par exemple, les produits alimentaires) sont régulièrement testés pour des contaminants (par exemple, insecte, moisissure, champignon, etc.). Dans une réalisation, les procédés consistent à mettre en contact un échantillon biologique avec une sonde constituée d'une lectine qui se lie à la chitine, à mettre en contact l'échantillon avec une pectinase, et à détecter la liaison de la lectine avec la chitine, la liaison étant indicative d'une présence de chitine dans l'échantillon biologique.
