A method for detecting psychrotrophic Bacillus in a sample is described, which method comprises determining whether the sample contains a nucleic acid which codes for a Bacillus major cold shock protein or a major cold protein homologue and which has a conserved nucleotide base which is different in psychrotrophic and mesophilic strains of Bacillus. The method is of particular use for detecting the presence of food spoilage organisms in food samples.
On décrit un procédé de détection du bacille psychrotrophe dans un échantillon, lequel consiste à déterminer si cet échantillon contient un acide nucléique qui code une protéine de choc thermique principale du bacille, ou un homologue principal de celle-ci, et qui a conservé une base nucléotidique, différente dans les souches psychrotrophes et mésophiles du bacille. Ce procédé est notamment utile pour détecter la présence d'organismes d'altération des aliments dans des échantillons alimentaires.
