Portions of ice-cream confectionery of uniform, particularly quasi-spherical shape, are continuously produced at a high rate using a device comprising a diaphragm shaping head comprising a distributor synchronized in its movement with the movement of the diaphragms. The device is provided with means for collecting and removing the drops formed by the heating of the confectionery due to the friction of the diaphragms so that hygiene risks are eliminated. The installation comprises the shaping device, a cooling tunnel and a coating unit, more especially for applying a coating of chocolate.
