The invention relates to a device for the circular kneading of dough pieces, having a drum (2) with openings (6) for receiving the dough (10) that is to be kneaded. These dough pieces (10) are kneaded by an inner drum (8) which is fitted inside the drum (2) and executes a kneading movement in relation to said drum (2). The lagging of the inner drum (8) has cavities (9) which are assigned to the openings (6) in the drum (2). At least one section of the lower half of the drum is accompanied by a support element (13) which is guided along the periphery of the drum (2), at least partially at a certain distance therefrom. This support element has a plurality of parallel links (15) which are connected to form an endless chain (14) that follows the movement of the drum. This chain (14) supports the dough pieces which are in the openings (6) during the kneading movement. In order to avoid the formation of stripes on the kneaded dough pieces, the links (15) are configured to form a closed surface, optionally by means of filler pieces (25) fitted between the links (15) on the side facing the drum (2). This closed surface is essentially level when the support element (13) is in the extended state.

L'invention concerne un dispositif pour le pétrissage en cercle de morceaux de pâte, qui comporte un tambour (2) pourvu d'ouvertures (6) dans lesquelles sont logés les morceaux de pâte (10) à pétrir. Ces morceaux de pâte (10) sont pétris par un tambour intérieur (8) disposé dans le premier tambour (2) et exécutant un mouvement de pétrissage par rapport à celui-ci. Ce tambour intérieur est pourvu, sur son enveloppe, de cavités (9) associées aux ouvertures (6) du premier tambour (2). Au moins une section de la moitié de tambour inférieure est accompagnée d'un élément d'appui (13) guidé le long de la périphérie du tambour (2) et au moins partiellement à une certaine distance de celui-ci, cet élément d'appui présentant une pluralité de maillons (15) disposés parallèlement les uns aux autres. Ces maillons (15) sont reliés pour former une chaîne (14) sans fin qui suit le mouvement du tambour. Cette chaîne (14) supporte les morceaux de pâte se trouvant dans les ouvertures (6) pendant le mouvement de pétrissage. Pour éviter la formation de stries sur les morceaux de pâte pétris, les maillons (15) sont conçus, éventuellement au moyen de pièces de remplissage (25) disposées entre les maillons (15) sur le côté tourné vers le tambour (2), pour former une surface fermée qui, lorsque l'élément d'appui (13) est à l'état étiré, est sensiblement plane.
