The invention relates to a device (10) for extracting the flank bones (11) of beheaded, slaughtered fish having open abdominal cavities that are transported on transport saddles (15), comprising am upper bone guide (12), a lower bone guide (13) and a separating unit (14) for detaching fish fillets from the flank bones (11), the separating unit (14) comprising a separating means (16) having a corresponding counter unit (17) and being movable from a waiting position into a working position and vice versa, characterized in that the separating means (16) is a rotating circular blade (18) and the counter unit (17) is a stationary element (19), wherein the circular blade (18) and the element (19) can be pivoted about two axes and that the element (19) can be moved relative to the circular blade (18) and independently thereof. The invention further relates to a corresponding filleting machine comprising such a device.
L'invention concerne un dispositif (10) pour enlever par découpage les arêtes latérales (11) de poissons étêtés, abattus et ouverts au niveau de leur cavité abdominale, les poissons étant transportés sur des supports de transport (15). Ce dispositif comprend un élément de guidage d'arêtes supérieur (12), un élément de guidage d'arêtes inférieur (13) et une unité de découpe (14) pour enlever les arêtes latérales (11) sur les filets de poissons. L'unité de découpe (14) comprend un moyen de découpe (16) avec une butée (17) correspondante et peut être déplacée d'une position d'attente à une position de travail, et inversement. Le dispositif selon l'invention se caractérise en ce que le moyen de découpe (16) est un couteau circulaire (18) rotatif et la butée (17) un élément (19) fixe, ce couteau circulaire (18) et cet élément (19) pouvant tous deux pivoter autour de deux axes et l'élément (19) pouvant être déplacé par rapport au couteau circulaire (18) et indépendamment de celui-ci. L'invention concerne également une machine à fileter correspondante comprenant un tel dispositif.
