The invention relates to a device (10) for separating filets from the spinal column (11) of beheaded, slaughtered fish with open abdominal cavity by cutting the bridge left by the abdominal and back blades around the spinal column (11), the fish being transported on transport saddles (15), comprising an upper bone guide (12), a lower bone guide (13) and a separating unit (14) having a separating means (16) for detaching the filets from the spinal column (11), a corresponding counter unit (17) being associated with said separating means, the separating unit (14) being movable from a waiting position into a working position and vice versa, characterized in that the counter unit (17) is arranged on the separating unit (14). The invention further relates to a filleting machine comprising such a device (10).
L'invention concerne un dispositif (10) pour détacher des filets de la colonne vertébrale (11) de poissons étêtés, abattus et ouverts au niveau de leur cavité abdominale par sectionnement de l'élément jointif laissé par les couteaux à ventre et les couteaux à dos autour de la colonne vertébrale (11), les poissons étant transportés sur des supports de transport (15). Ce dispositif comprend un élément de guidage d'arêtes supérieur (12), un élément de guidage d'arêtes inférieur (13) et une unité de découpe (14) comprenant un moyen de découpe (16) pour détacher les filets de la colonne vertébrale (11), une butée (17) correspondante étant associée à ce moyen de découpe (16). L'unité de découpe (14) peut être déplacée d'une position d'attente à une position de travail, et inversement. Le dispositif selon l'invention se caractérise en ce que la butée (17) est disposée sur l'unité de découpe (14). L'invention concerne également une machine à fileter comprenant un tel dispositif (10).
