The invention relates to an apparatus for continuously producing a dough strip (6), the width thereof is a plurality of its thickness, from a dough mass (5), and comprises at least one pair of oppositely disposed elongated guiding elements (8, 9) for the dough, which are disposed spaced apart from each other. The dough passes the gap (15) formed this spacing and is guided by the guiding elements (8, 9) driven in opposite direction of revolution from an intake end (16) of the apparatus to an outlet end (17) thereof. At least one of the guiding elements (8, 9) is provided on its periphery with a profile constituted by a plurality of grooves (20) extending across to the longitudinal direction of the respective guiding elements (8, 9), side-by- side. These grooves (20) assist conveying the dough through the gap (15) and constitute an evading possibility for bubbles present in the dough (5).

L'invention concerne un dispositif de fabrication en continu d'une bande de pâte (6), dont la largeur est un multiple de son épaisseur, à partir d'une masse de pâte (5). Ce dispositif comprend au moins une paire d'organes de guidage (8, 9) longitudinaux opposés, destinés à guider cette pâte et agencés de façon espacée l'un de l'autre. Cette pâte passe à travers la fente (15), formée par cet espacement, en étant guidée par les organes de guidage (8, 9), entraînés dans un sens de rotation opposé, depuis une extrémité d'entrée (16) du dispositif jusqu'à une extrémité de sortie (17) de ce dernier. Au moins un des organes de guidage (8, 9) présente, au niveau de son pourtour, un profilage formé par plusieurs rainures (20), qui s'étendent, de façon juxtaposée, perpendiculairement au sens longitudinal des organes de guidage correspondant (8, 9). Ces rainures (20) permettent l'acheminement de la pâte à travers la fente (15) et forment une possibilité de contourner les bulles présentes dans la pâte (5).
