ABSTRACT OF THE DISCLOSURE A device for creating an oscillating movement of a knife-bearing element in a machine for skinning fish fillets, wherein the device comprises a crank drive an eccentric crankpin of which carrying an idler ring, the knife bearing element is arranged essentially perpendicular to the axis of the crank drive, and one of the ends of the knife-bearing element is equipped with a sliding surface, an end face of which bears against the surface of the idler ring by the action of a return spring acting on the knife bearing element.
