An improved method for imparting a butter flavor to a product, the method comprising adding to the product an organoleptically effective amount of diacetyl, the improvement comprising substituting for the diacetyl, an organoleptically acceptable derivative of diacetyl having the formula: (formula I) , or an or anole ticall acce table salt thereof, as well as compositions for carrying out the method and products and articles of manufactur comprising the additive.

L'invention concerne une méthode pour conférer un arôme de beurre à un produit. Cette méthode consiste à ajouter au produit une quantité organoleptiquement efficace de diacétyle, l'amélioration de l'invention consiste à substituer le diacétyle par un dérivé organoleptiquement acceptable de diacétyle de formule (I), ou par un sel organoleptiquement acceptable de celui-ci. L'invention concerne également des compositions pour mettre en oeuvre cette méthode, ainsi que des produits et des articles de fabrication comprenant cet additif.
