- 18 - ABSTRACT A process wherein konjak mannan and minced meat are used as the main raw materials which comprises obtaining a hydrate gel of konjak mannan by making a coagulant act on a mixture of konjak mannan and a relatively small quantity of water, mixing and kneading this hydrate gel and minced meat, forming the kneaded mixture into a desired shape, and freezing the shaped product, or heating and freezing the shaped product, or conducting no freezing whereby dietary fibrous food can be economically manufactured which is excellent dietetically, organoleptically and in terms of physical properties.

Procédé selon lequel du mannane de konjak et de la viande émincée sont utilisés comme principales substances brutes à la base d'un gel d'hydrate de mannane de konjak. Ce gel est obtenu par l'ajout d'un coagulant qui agit sur un mélange de mannane de konjak et d'une faible quantité d'eau, puis par malaxage et pétrissage du gel et de la viande émincée. Le mélange pétri est façonné et congelé. Le produit façonné peut également être chauffé et congelé. Le produit non soumis à la congélation permet par ailleurs de produire, à peu de frais, des aliments à base de fibres alimentaires présentant d'excellentes propriétés diététiques, organoleptiques et physiques.
