A process for extracting high purity maltol and essential oils from a source material by a sublimation process. A source material containing maltol and essential oils is subjected to a sublimation step for obtaining a sublimate. The sublimation step is carried out under vaccum condition and/or in the presence of an entrainer non reactive gas. The sublimate is then subjected to a condensation step which consists essentially of direct cooling or indirect cooling. The condensed maltol is finally subjected to a purification step for obtaining a snow-like high purity maltol. This process allows industrial scale production of high-quality maltol usable for the food industry. Indeed, this high-quality maltol may be used as a flavour enhancer.
