Abstract of the Disclosure A double plate retrofit assembly for a meat grinder includes a centering pin adapted for insertion into a longitudinal bore provided in the feed screw of the meat grinder. Primary and secondary knife holder assemblies are adapted for mounting to the centering pin, and primary and secondary orifice plates are mounted adjacent the primary and secondary knife holder assemblies, respectively. Adapter mounting rings are employed for affixing the orifice plates to the end of the meat grinder. A spring washer mechanism is dis- posed adjacent each knife holder assembly for biasing the knife holder assemblies against the orifice plates to improve grinding performance. The amount of bias provided by the spring washers is adjustable by adjusting the position of the mounting rings.
