L 7225 (R) ABSTRACT EDIBLE EMULSIONS The invention provides an edible spread of which at least 50% of the fat phase comprises a single triglyceride having a carbon number greater than 45 and preferably greater than 48. Such spreads find particular application in the treatment of clinical conditions exhibiting aberrant fat metabolism and are also suitable for consumption by individuals not exhibiting aberrant fat metabolism. In a preferred embodiment of the invention the fat phase is essentially pure glyceroltriolein. While the above mentioned fat phases can be prepared by admixture of chemically synthesised triglycerides, the use, as these fat phases, of fats obtained from genetically modified oilcrops is not excluded.
