Olive oil based products, based on the virgin olive oils, containing plant sterol and/or stanol fatty acid ester blends made from high polyunsaturated fatty acid containing vegetable oils are provided. The olive oil based products provide the advantage of incorporating cholesterol-lowering plant stanols and sterols into high grade commercial olive oils, such as virgin olive oils, while avoiding the undesirable precipitation or crystallization of higher melting lipids in higher grade olive oils normally associated with the incorporation of such stanol and/or sterol fatty acid esters by crystallizing any higher melting lipids from the olive oil at temperatures ranging from room temperature to refrigerator temperature. Methods for preparing the olive oil based products are provided.
