An edible, reduced fat oil-in-water type emulsion (o/w emulsion) having rheological and sensorial properties resembling those of mayonnaise or spreads. This is achieved by using a water-soluble casein salt in combination with controlled homogenisation and acidification.

L'invention porte sur une émulsion de type aqueux pauvre en graisse et comestible (H/E)présentant des propriétés rhéologiques et sensorielles ressemblant à celles de la mayonnaise ou des pâtes à tartiner. Cette émulsion s'obtient en utilisant du sel de caséine hydrosoluble en combinaison avec une homogénéisation et acidification contrôlées.
