This invention relates to an edible product with homogeneous consistency containing a starchy vegetable material and having a water content of at least 60% by weight. At least 50%, preferably at least 75% of the cells of this vegetable material are broken, and the amylose contained in the starch is dispersed as amylose particles with a size of less than 10 ~m within the amylopectin of the starch. The invention also relates to a process for preparing such a product.
L'invention concerne un produit comestible présentant une consistance homogène et contenant une matière végétale farineuse, et un contenu en eau d'au moins 60 % en poids. Au moins 50 %, et de préférence au moins 75 %, des cellules de cette matière végétale sont cassées, et l'amylose contenue dans l'amidon est dispersée en particules d'amylose d'une dimension inférieure à 10 µm dans l'amylopectine de l'amidon. L'invention concerne également un procédé de préparation d'un tel produit.
