An intermediary edible composition of a protein emulsion that can be formed into intermediary films for construction of sheets and pockets, and into extruded forms is disclosed. The emulsion preferably includes a fish-based protein and is used to create intermediary films, which are laid in convex mold halves (Fig. 1). The molds are mated and subjected to a heating step where after a protein-based pocket structure is formed. The pocket can be used for holding a variety of foodstuffs, and has excellent moisture absorption resistance as well as mechanical properties.

L'invention concerne une composition intermédiaire alimentaire d'une émulsion de protéine pouvant être mise sous forme de films intermédiaires, destinés à la construction de feuilles et de poches, ainsi que sous des formes extrudées. L'émulsion comprend, de préférence, une protéine à base de poisson et elle est utilisée pour créer des films intermédiaires qui sont étendus dans des moitiés de moules convexes (Figure 1). Les moules sont refermés et soumis à un traitement thermique ce qui permet de former une structure de poche à base de protéine. La poche peut être utilisée pour contenir une variété de produits alimentaires et possède une très bonne résistance à l'absorption d'humidité et de très bonnes propriétés mécaniques.
