An edible plastified emulsion spread containing water and fat which consists of chemically unmodified vegetable fat or a blend of such fats. The fatty acid residues of the fat have a ratio of C16 carbon and shorter chain fatty acids to stearic, oleic and linoleic acids C18 fatty acids of about 7.9 : 83.5 or less. The triglycerides present in the fat comprise at least 30% H2U triglycerides in which H indicates stearic and palmitic acids and U indicates oleic and linoleic acids. This allows production of an edible spread in which the fat phase is essentially a single, natural, vegetable fat or fat blend.
