A process for the washing and/or disinfection of eggs is provided. The process comprises contacting the eggs with a nonionic surfactant, an amphoteric surfactant and an aqueous solution of a peracid. The surfactants and peracid solution may be combined, or may be employed in separate stages. Preferably, the solutions are sprayed onto the eggs, optionally in the presence of an antifoam. The preferred peracid is peracetic acid.

L'invention concerne un procédé de lavage et/ou de désinfection des oeufs. Le procédé consiste à mettre en contact les oeufs avec un tensioactif non ionique, un tensioactif amphotère et une solution aqueuse d'un peracide. Les tensioactifs et la solution de peracide peuvent être combinés ou peuvent être utilisés dans des étapes séparées. De préférence, les solutions sont vaporisées sur les oeufs, éventuellement en présence d'un agent antimousse. Le peracide préféré est l'acide peracétique.
