A controller for controlling the cooking of food within a cooking apparatus. The controller is comprised of a temperature sensor input for receiving an output of a temperature sensor and a system for initiating the cooking of a food product based upon a set cook temperature and a set cooking time. Plural indications of incremental energy that is absorbed by the food product during the cooking are dtermined, wherein each of the plural indications of incremental energy is based upon a difference between a temperature determined at the temperature sensor input and a desired internal temperature of the food product. The end of the cooking is established when the total of the plural indications of incremental energy is one of equal to and greater than an ideal energy to prepare the food product based upon the set cooking time and the cooking temperature.
La présente invention concerne un régulateur permettant de réguler la cuisson d'un aliment dans un appareil de cuisson. Le régulateur comporte une entrée permettant de recevoir un signal de sortie de capteur de température et un système de déclenchement de la cuisson d'un produit alimentaire sur la base d'une température de cuisson fixée et d'un temps de cuisson fixé. Plusieurs indications d'énergie incrémentielle absorbée par le produit alimentaire au cours de la cuisson sont déterminées, chacune de ces indications d'énergie incrémentielle étant établie d'après une différence entre une température déterminée à partir du signal du capteur de température et une température interne désirée pour le produit alimentaire. La fin de la cuisson est atteinte lorsque la totalité de ces indications d'énergie incrémentielle est égale ou supérieure à une énergie idéale permettant de préparer le produit alimentaire compte tenu du temps de cuisson fixé et de la température de cuisson fixée.
