The invention relates to a method for eliminating unwanted accompanying substances, particularly fragrance, flavor, and colour components, from vegetable proteins. Said method encompasses the following steps: (i) a vegetable raw material is extracted using an extracting agent such that a vegetable protein extract is obtained; (ii) an inorganic adsorber material is added to the vegetable protein extract, a process in which unwanted accompanying substances, especially fragrance, flavor, and/or colour components, are bonded to the inorganic adsorber material.

L'invention concerne un procédé d'élimination de substances associées indésirables, en particulier de composants aromatiques, de composants conférant du goût et/ou de composants colorants, des protéines végétales, procédé comprenant les étapes suivantes : (i) extraction d'une matière première végétale, au moyen d'un agent d'extraction, ce qui fournit un extrait de protéine végétale; (ii) addition d'un matériau absorbeur inorganique à l'extrait de protéine végétale, de telle sorte que les substances associée indésirables, en particulier les composants aromatiques, les composants conférant du goût et/ou les composants colorants soient liés audit matériau absorbeur inorganique.
