The present invention relates to particles comprising an active ingredient. The active ingredient is encapsulated by coacervation, and further encapsulated by a glassy matrix. The glassy matrix comprises 3-50wt% of a hydrophobically modified starch, and 50-97wt% of a starch hydrolysate. The particles are useful for encapsulating active ingredients intended for oral ingestion and may be added to food products.

L'invention concerne des particules contenant un principe actif. Ce principe actif est encapsulé par co-acervation, et encapsulé ultérieurement par une pâte vitreuse. La pâte vitreuse comprend 3 à 50 % en poids d'un amidon modifié sur le plan hydrophobe et 50 à 97 % en poids d'un hydrolysat d'amidon. Les particules sont utiles dans l'encapsulation de principes actifs destinées à l'ingestion orale et peuvent être ajoutées à des produits alimentaires.
