Compositions and methods to reduce the oxidation of an oxidizable material are disclosed herein. A composition comprising a phospholipid-stabilized oxidizable material is disclosed. The composition comprises an oxidizable material, a phos-pholipid, and an optional protein. The phospholipid reduces the oxidation of the oxidizable material in the absence of water.

L'invention porte sur des compositions et des procédés qui permettent de réduire l'oxydation d'une matière oxydable. L'invention concerne une composition renfermant une matière oxydable stabilisée par un phospholipide. La composition précitée comprend une matière oxydable, un phospholipide et, facultativement, une protéine. Le phospholipide réduit l'oxydation de la matière oxydable en l'absence d'eau.
