Enzyme degrading rhamnogalacturonane II (RG-II) and having an endo- beta -L-rhamnopyranosyl-(1}3')-D-apiofuranosyl hydrolase activity and/or an endo- alpha -L-fucopyranosyl-(1}4)-L-rhamnopyranosyl hydrolase activity. Said enzyme can be produced by a microorganism, particularly of the Penicillium genus, such as the strains I-1577 and I-1578 deposited at the CNCM. RG-II may be obtained from plant extracts by means of a process comprising a chromatography.

Enzyme dégradant le rhamnogalacturonane II (RG-II) présentant une activité endo-.beta.-L-rhamnopyranosyl-(1.fwdarw.3')-D-apiofuranosyl hydrolase et/ou une activité endo-.alpha.-L-fucopyranosyl-(1.fwdarw.4)-L- rhamnopyranosyl hydrolase. Cette enzyme peut être produite par un microorganisme, en particulier du genre Penicillium, tel que les souches I- 1577 et I-1578 déposées auprès de la CNCM. Le RG-II peut être obtenu à partir d'extraits d'origine végétale par un procédé comprenant une chromatographie.
