The invention relates to a coffee beverage composition being devoid of significant contents of oil and insoluble particulates, comprising (a) at least 15% based on the total weight of coffee solids of total mannose, wherein the free raannose content is less than 50% by weight of the total mannose content, and (b) less than 1,000 ppm on a total coffee solids basis of 5- hydroxymethyl furfural, and to a process for producing a soluble coffee extract, comprising the steps: (i) combining roast and ground coffee with water, (ii) adding hydrolase enzymes, (iii) wet-milling to a mean particle size of about 10 to about 250 ~m, (iv) treating the reaction mixture by exposing it to a temperature in the range of about 20~C to about 90~C, preferably about 5O~C to about 60~C, and (v) circulating the reaction mixture through a cross-flow semi-permeable membrane separation device where the soluble coffee extract is obtained as permeate.

L'invention concerne une composition de boisson au café ne présentant pas de teneur significative en huile et en particules insolubles et contenant (a) au moins 15 % de mannose total par rapport au poids total des solides de café, la teneur en mannose libre étant inférieure à 50 % en poids de la teneur en mannose total, et (b) moins de 1000 ppm de 5-hydroxyméthylfurfural sur une base totale de solides de café. L'invention concerne également un procédé servant à produire un extrait de café soluble et comprenant les étapes suivantes : (i) mélange de café torréfié et de café moulu à de l'eau, (ii) ajout d'enzymes hydrolases, (iii) mouture humide à une taille de particule moyenne d'environ 10 à environ 250 ?m, (iv) traitement du mélange réactionnel par exposition à une température comprise entre environ 20 °C et environ 90 °C, de préférence entre environ 50 °C et environ 60 °C, et (v) circulation du mélange réactionnel à travers un dispositif de séparation à membrane semi-perméable à écoulement croisé dans lequel l'extrait de café soluble est obtenu sous forme de perméat.
