Abstract of the Disclosure A method of preventing the activity of an enzyme from being degraded by a substrate in an enzyme reaction in an aqueous phase, which comprises causing an organic solvent immiscible with water but miscible with the substrate to be present in the reaction system thereby to reduce the concentration of the substrate in the aqueous phase below that concen- tration at which the activity of the enzyme is sub- stantially inhibited.
