ABSTRACT OF THE DISCLOSURE: A hydropyrimidine hydrolase formed by cultivation of strain NRRL B-11079 or strain NRRL-B-11080, which strains are micro-organisms of the Bacillaceae family, used for hydrolysing racemic hydantoins into optically active amino acids The method of preparation of optically active amino acids is an enzymatic hydrolysis fostered by the enzyme deriving from such special micro-organisms. The hydrolysis can be effected at a comparati- vely high temperature, which can reach even 60°C.
