F 7071 (R) ABSTRACT The invention concerns a process for the enzymic removal of diglycerides from glyceride mixtures. Herefore, the glyceride mixture is contacted with an enzyme specific for the conversion of diglycerides. This contact is performed in an aqueous emulsion of the diglycerides, wherein the droplet size of the dispersed phase is less than 100 µm.
