A substance having an antimicrobial activity against heat-resistant sporeforming bacteria, which can be used for improving storage duration of drink or processed food or preventing bacteria for cosmetic is provided. The invention is directed to a catechin ester in which an ester is formed between at least one of the hydroxyl groups of a catechin and a medium-chain fatty acid. The medium chain fatty acid ester of a catechin of the invention shows strong growth inhibition against heat-resistant sporeforming bacteria as a simple substance or a composition and can prevent decay or deterioration of drink and food by adding thereto, and can prevent decay or deterioration of cosmetic by adding thereto.
La présente invention a pour objet une substance présentant une activité anti-microbienne contre les bactéries sporulantes résistant à la chaleur, et qui peut être employée pour améliorer le temps de stockage d'une boisson ou d'un aliment manufacturés, ou encore pour protéger un produit cosmétique contre les bactéries. La présente invention concerne un ester de catéchine, ledit ester étant formé entre au moins un des groupements hydroxy d'une catéchine et un acide gras de longueur de chaîne moyenne. Ledit ester d'acide gras de longueur de chaîne moyenne d'une catéchine selon l'invention présente une puissante activité inhibitrice de la croissance des bactéries sporulantes résistant à la chaleur, que ce soit seul ou au sein d'une préparation. Ledit ester de catéchine selon l'invention peut empêcher la décomposition ou la détérioration d'une boisson ou d'un aliment lorsqu'il y est ajouté, et peut également empêcher la décomposition ou la détérioration d'un produit cosmétique lorsqu'il y est ajouté.
