Introducing sucrose phosphorylase activity into plants by transformation with a gene for the enzyme increases the rate of sucrose hydrolosis, leading to increased starch, oil, and protein levels. The preferred gene is from Streptococcus mutans. Surprisingly, in potatoes transformed to express this gene in tubers, reduced bruise discoloration susceptibility and increased uniformity of starch deposition throughout the tuber are achieved.

L'introduction d'une activité de phosphorylase du sucrose dans des plantes par transformation au moyen d'un gène pour cette enzyme accroît la vitesse d'hydrolyse du saccharose, ce qui se solde par une augmentation des concentrations d'amidon, d'huile et de protéines. Le gène préféré dans le cadre de cette invention est issu du Streptococcus mutans. Curieusement, dans des pommes de terre transformées pour que s'exprime ce gène dans les tubercules, on note une tendance réduite à l'altération de la coloration due à des meurtrissures tandis que l'on remarque un dépôt d'amidon plus uniforme sur tout le tubercule.
