The invention provides a meat product comprising extruded inner core of meat substrate and one or more co-extruded outer layers wholly or partly around the core, wherein at least of the outer layers consists of a meat or fat emulsion; characterised in that the fibres within the meat or fat emulsion layer are distributed substantially uniformly within the emulsion layer and are disoriented, so as to improve the cohesiveness of that layer. The invention also provides an extrusion nozzle for forming the meat product of the invention.
La présente invention a pour objet un produit carné comprenant une âme interne de subjectile carné et une ou pluiseurs couches extérieures co-extrudées entièrement ou partiellement autour du noyau, où au moins la couche extérieure consiste en de la viande ou en une émulsion de gras; la particularité de l'invention est que les fibres à l'intérieur de la couche de viande ou d'émulsion de gras sont réparties de manière sensiblement uniforme à l'intérieur de la couche d'émulsion et sont désorientées, de manière à donner plus de cohésion à cette couche. L'invention comprend également une buse d'extrusion servant à donner la forme du produit carné faisant l'objet de l'invention.
