Fat continuous food products which comprise a dispersed aqueous phase a primary emulsifier, polyglycerol polyricinoleate, one or more co-emulsifiers, wherein the dispersed aqueous phase comprises a specific amount of protein and wherein the solid fat content of the fat is below 6 % at 35~C or the ambient temperature of interest, are storage stable to 40 ~C, stable under spreading, and still show good melting behaviour upon consumption.

L'invention concerne des produits alimentaires continus à base de matières grasses, qui comprennent une phase aqueuse dispersée, un émulsifiant principal, du polyricinoléate de polyglycérol, et un ou plusieurs co-émulsifiants. La phase aqueuse dispersée comprend une quantité spécifique de protéines et la proportion de graisse présente sous forme solide est inférieure à 6 % à 35 ·C ou à la température ambiante souhaitée. Ces produits sont stables à l'entreposage à environ 40 ·C, sont stables lorsqu'ils sont étalés, et présentent néanmoins une fusion satisfaisante lorsqu'ils sont consommés.
