A method for crystallising fat to enable later fractionation, in particular by pressure filtering, wherein the fat is melted, the molten mass is divided into beads, the beads are fed into a pre-refrigerated aqueous solution, the fat concentration relative to the aqueous solution is adjusted, the bead feed rate is controlled, the temperature of the bead/solution mixture is adjusted, and the temperature of the mixture is maintained until the crystallisation of each bead has completely stabilised, whereafter the bead/solution mixture is transferred to a filtering station, the fat beads are separated at a low pressure from the aqueous solution, and finally the liquid portion of the fat is extracted at a high pressure from said fat beads. An apparatus for carrying out the method is also disclosed.

Procédé de cristallisation de matières grasses pour leur fractionnement ultérieur notamment par filtrage sous pression, consistant notamment à fondre les matières grasses, à diviser la masse fondue en billes, à introduire ces billes dans une solution aqueuse préalablement réfrigérée, à ajuster la concentration de matière grasse par rapport à la solution aqueuse, à régler le débit d'introduction desdites billes, à ajuster la température du mélange billes/solution, à maintenir ladite température du mélange jusqu'à la stabilisation complète de la cristallisation de chaque bille, à transférer ensuite le mélange billes/solution à l'endroit de filtrage, à séparer sous faible pression les billes de matière grasse de la solution aqueuse et à extraire enfin desdites billes de matière grasse, sous forte pression, la partie liquide de la matière grasse, et installation pour sa mise en oeuvre.
