A B S T R A C T The production, isolation and partial characterisation of a new lipase from Geotrichum candidum is described, as well as several uses for it. It is called lipase B and is extremely specific for 9-cis fatty acids. The Geotrichum candidum used was deposited under the Budapest Treaty at the Culture Collection of the CAB International Mycological Institute (CMI CC) on 17 October 1989 under No. CMI 335426. Use is made from the option given under Rule 28(4) EPC.
