ABSTRACT OF THE DISCLOSURE Fatty esters of particular alkoxylated starches and dextrins are provided, which fatty esters possess sufficient hydrophobicity and other desirable properties making them suitable for use as replacements for traditional petrochemical polymers. The fatty esters are particularly suitable for use as binders in coating, adhesive and ink compositions. The preparation of these fatty esters is also advantageous as it can be conducted under conditions largely known from alkyd and polyester chemistry.
