The present invention provides a method for altering the fatty acid profile of milk from female ruminant livestock to have desired proportions and/or types of fatty acids, wherein said method comprises feeding to the ruminant livestock, protected lipid having said desired proportions of fatty acids, such that about 60 to about 90 % of said protected lipid is capable of passing through the rumen undigested leaving about 60 to about 90 % of said protected lipid available for digestion post-ruminally.

L'invention concerne un procédé de modification du profil de l'acide carboxylique du lait provenant du bétail ruminant femelle, afin d'obtenir des proportions souhaitées et/ou des types d'acide carboxylique. Ce procédé consiste à alimenter le bétail ruminant avec des lipides protégés possédant lesdites proportions souhaitées d'acide carboxylique, de manière à ce que, 60 à 90 %, environ, desdits lipides protégés puissent passer dans la panse sans être digérés, laissant de fait, 60 à 90 %, environ, desdits lipides protégés prêts pour la digestion après rumination.
