The invention relates to a method for producing by fermentation at least one type of organic compound containing at least 3 C atoms or at least two C atoms and at least one N atom consisting a1) in grinding a starch source for obtaining a ground product containing at least one part of solid starch-devoid components of the starch source, 2a) in suspending the ground material in an aqueous fluid and in hydrolysing by enzimatically liquefying the starch part of the starch source and eventually metabolisable metabolisable subsequently saccharifying, thereby obtaining a first mono- and oligosaccharide-containing liquid (1), b) in adding, under fermentation conditions, the mono- and oligosaccharide-containing liquid (1) together with monosaccharides, disaccharides and/or metabolisable oligosaccharides or with a monosaccharides, disaccharides and/or metabolisable oligosaccharides-containing composition at a concentration less than 50 % by weight which is practically devoid of water insoluble solids, to a fermentation medium containing a micro organism which enables an organic compound to be overproduced.

L'invention concerne un procédé servant à produire par fermentation au moins un composé organique ayant au moins 3 atomes de C ou ayant au moins 2 atomes de C et au moins un atome de N. Le procédé selon l'invention comprend les étapes suivantes : a1) mouture d'une source d'amidon avec obtention d'un produit moulu qui contient au moins une partie des constituants solides non amylacés de la source d'amidon, a2) mise en suspension du produit moulu dans un liquide aqueux et hydrolyse de la part amylacée du produit moulu par liquéfaction enzymatique et saccharification consécutive éventuelle, un premier liquide (1) contenant des monosaccharides ou des oligosaccharides étant ainsi obtenu, et b) addition, en conditions de fermentation, du liquide (1) contenant des monosaccharides ou des oligosaccharides, en combinaison avec des monosaccharides, disaccharides et/ou oligosaccharides métabolisables ou avec une composition qui contient des monosaccharides, disaccharides et/ou oligosaccharides métabolisables dans une concentration inférieure à 50 % en poids et qui est pratiquement exempte de solides insolubles dans l'eau, à un agent de fermentation qui contient un micro-organisme apte à la surproduction du composé organique.
