Abstract of the Disclosure A process is described for removing water-soluble carbohydrates in the production of plant protein products, particu- larly for removing water-soluble carbohydrates which cause flatulence in man and animals. An aqueous solution or dispersion of the carbohydrate-containing material containing 1-60% dry matter is inoculated with a microorganism selected from strains of Saccharomyces capable of degrading and assimilating flatus- causing carbohydrates and fermented for from 12 to 48 hours. The product with substantially all water-soluble carbohydrates removed is useful is human foods and animal foods.
