The present application relates to a fermented milk or yoghurt powder which contains very high contents of S. thermophilus and L. bulgaricus, and which exhibits exceptional storage capacities. In the powder according to the invention, no substantial loss of live S. thermophilus and L. bulgaricus is observed after four months of storage at 2O°C. The powder according to the invention has microbiological characteristics such that it itself corresponds to the name yoghurt or fermented milk.

La présente demande est relative à une poudre de lait fermenté ou yoghourt qui contient de très fortes teneurs en S. thermophilus et L. bulgaricus, et qui présente d'exceptionnelles capacités de conservation. Dans la poudre selon l'invention, aucune perte substantielle en S. thermophilus et L. bulgaricus vivants n'est observée au bout de quatre mois de conservation à 2O~C. La poudre selon l'invention présente des caractéristiques microbiologiques telles qu'elle répond elle-même à l'appellation de yoghourt ou lait fermenté.
