The invention relates to the use of acacia gum, in particular from Senegal acacia, in the preparation of a stable fermented product containing milk or soybean, wherein said gum is used in a concentration of approximately 3 to 10 wt % relative to the total weight of the fermented product containing the acacia gum, and is added after fermentation of said product.

La présente invention concerne l'utilisation de gomme d'acacia, notamment acacia senegal, pour la préparation d'un produit fermenté stable à base de lait ou à base de soja, ladite gomme étant utilisée à une concentration d'environ 3 à environ 10 % en poids, par rapport au poids total du produit fermenté contenant Ia gomme d'acacia et étant ajoutée après la fermentation dudit produit.
