The present invention relates to a fermenter consisting of a vat provided internally with a diaphragm designed to retain the gas bubbles produced by fermentation and release them when they have reached a large size. The diaphragm consists of a concave surface underneath which the rising bubbles are temporarily collected and continue to rise as soon as they flow out from the diaphragm full of gas. In this way the small bubbles which rise up combine together to form others which are larger and able to create strong currents which continuously remix the floating marc and in this way make it possible to avoid or, at least greatly limit, solidification of the cap, keeping it constantly fluid.
Fermenteur formé d'une cuve à l'intérieur de laquelle est placé un diaphragme prévu pour retenir les bulles de gaz produites par la fermentation et pour les libérer lorsqu'elles sont suffisamment grosses. Le diaphragme est constitué d'une surface concave sous laquelle les bulles qui montent sont temporairement collectées et continuent à monter dès qu'elles sortent du diaphragme rempli de gaz. De cette manière les petites bulles qui montent se combinent pour former des bulles plus grosses elles-mêmes capables de créer des courants forts qui remélangent en continu le marc flottant et il est ainsi possible d'empêcher, ou du moins de limiter fortement, la solidification de la partie supérieure, ceci permettant de maintenir cette dernière dans un état fluide constant.
