The invention relates to a backed product rich in flour-containing fibres comprising from 6 to 20 % by weight a mixture of at least one type of starch and an improving agent selected from a group consisting of branched maltodextrins, polydextrins and a polydextrose, wherein said percentages are expressed by weight with respect to a final product. A method for producing said backed product is also disclosed.

L'invention a pour objet un produit de cuisson enrichi en fibres comprenant de la farine, caractérisé en ce qu'il comprend de 6 à 20% en poids d'un mélange d'au moins un amidon résistant et d'un agent améliorant choisi dans le groupe constitué par les maltodextrines branchées, les pyrodextrines et le polydextrose, ces pourcentages étant exprimés en poids par rapport au produit fini. Elle a également pour objet un procédé de préparation d'un tel produit de cuisson.
