ABSTRACT OF THE DISCLOSURE An edible fibrous cellulose product and the process for making the product. Particulate fibrous cellulose is encapsulated in an edible gum solution to produce a low calorie base product or the manufacture of foods and pharmaceuticals. The gum solution may include a polyhydric alcohol. The encapsulated fibrous cellulose base product has a smooth and pleasant mouth feel imparted by the gum solution, and may be combined with other materials to form edible products which are highly palatable. The encapsu- lation process consists of coating the surface of the fibrous cellulose material with the gum solution, or, alternatively, mixing the fibrous cellulose and gum in a water system, which may contain polyhydric alcohol, then optionally drying the mixture to provide a free-flowing product.
