ABSTRACT OF DISCLOSURE A machine for filleting shoal fish with high fat content for preparing such fish for the production of skin-free single fillets is described. The main object is to separate the fat strips present along the sides of the back fins and affecting the fillet quality from the muscle flesh before the skinning step by which the fillets are completely separated from each other. To this end a filleting machine conventionally having at least one pair each of belly filleting knives, of inclined rib knives, and of inclined guides for guiding the inner sides of the filleted fish comprises, in the region of the guides, a pair severing tools with peeling or scraping edges departing from the guide edges including a guide gap between them and diverging to include an angle of 60° to 180° between them.
