The invention relates to a fish-based product comprising at least fish meat, water, a starch premix and phosphate(s) and a method of making same. The product is preferably in loaf form, is substantially solid and not substantially prone to flaking or crumbling in use. The product also substantially retains the texture and flavour of unprocessed cooked fish meat.

Cette invention concerne un produit alimentaire à base de poisson comprenant au moins de la chair de poisson, de l'eau, un prémélange d'amidon et un ou des phosphates. Elle concerne également un procédé de fabrication dudit produit. Le produit se présente de préférence sous forme de pain, est sensiblement solide et sensiblement non prédisposé à l'écaillement ou à l'effritement pendant l'utilisation. Le produit conserve également sensiblement la texture et la saveur de la chair de poisson cuite non conditionnée.
