ABSTRACT The head of a fish, particularly salmon, is severed from the body by first forcing the blunt rounded tip of a beheading knife against a gill cover to punch the gill cover inward. The beheadinq knife is moved transversely of the fish and is contoured substantially to the contour of the pectoral girdle of the fish with opposite edges tapering toward the blunt tip The edges of the knife are chamfered at the convex side for wedging engagement with the pectoral girdle of the fish to guide the knife for movement through the fish along the profile of the pectoral girdle.
