Frozen ready-to-cook fish patties formed of a patty mixture consisting of pieces of fish meat ranging from 1/2 inch to 1-1/2 inches in largest dimension; adhered to one another by an equal or smaller amount of a matrix mixture consisting primarily of minced or finely chopped meat of the same type of fish. The patty mixture is prepared with the pieces of fish meat always at a temperature below the freezing point of water. The patties are quickly deep frozen after formation. Water may be applied as a mist to form a thin coating of ice to protect each patty from freezer burn.
