A fish processing apparatus for extracting fish roe. A pair of conveyor belts having pockets travel along a frame having infeed and outfeed locations. Fish are placed belly-up in the pockets at the infeed location and travel over a cutting instrument that severs the backbone, after which, both the belts and the two pieces of backbone (and the fish) are forced apart by a v-shaped separator. As the fish are torn into two pieces, the pieces are held in the pockets by way of a pair of parallel bars positioned above the belts. As the belts are forced to diverge by the separator, the bars act to squeeze the roe towards a central gap in the v-shaped separator and frame where it drops down a chute to a collection area. The remaining pieces of fish fall out of the belts at the outfeed location.
