An embodiment provides a method of processing a fish. In the method, a head of live fish is cut at nearby a branchi by a blade to cause the fish to an immediate death, and to cut off the nerves, artery and vein. Next, the medulla spinalis nearby a tail fin is cut. Then, a needle made of a piano wire is inserted into a nerve portion of the backbone, which is exposed in cut surfaces nearby the head and the tail fin. The needle is moved back and forth along an axial direction to destruct and remove the jelly-like nerves and a medullar oblongate in the nerve portion.

Un mode de réalisation de cette invention procure une méthode de transformation des poissons. Cette méthode permet de couper la tête d'un poisson vivant près des branchies à l'aide d'une lame causant la mort immédiate du poisson et coupant les nerfs et les vaisseaux sanguins. Ensuite, la moelle épinière proche d'une nageoire caudale est coupée. Puis, une aiguille faite d'une corde à piano est insérée dans une des parties du système nerveux situées dans l'épine dorsale, qui est dénudée en surfaces coupées proches de la tête et de la nageoire caudale. L'aiguille exerce un va-et-vient le long d'une direction axiale pour détruire et retirer les nerfs de texture gélatineuse et la partie du bulbe rachidien du système nerveux.
